Facts about mushrooms
Mushrooms are every foodie's delight. A must have on any gourmet food menu, mushrooms are also a great source of nutrition. They are high in dietary fibre and protein. They are a good source of three essential B-vitamins: riboflavin, niacin and pantothenic acid. They are rich in potassium, an element that helps regulate blood pressure, helps keep the right balance of water in fat and muscle tissues, and helps ensure the proper functioning of cells.
Mushrooms also serve as a good substitute to meat due to their texture. Hence they are a good option for vegetarians or those trying to turn vegetarian but don't want to miss on the 'meaty texture'.
They are an ideal health food. Five medium mushrooms contain only 20 calories, 3 grams of carbohydrate, and are virtually fat free.

Stuffed garlic mushroom....
It's mushrooms, it's garlic....it's yum!
- Serves: 4
- Prep Time: 20 min.
- Total Time: 50 min.
Ingredients
- Large white mushrooms - 10-12
- Indian cottage cheese (Paneer) - 200gms
- Garlic cloves - 5-6 finely chopped
- Ginger garlic paste - 1 heaped tsp
- Green chillies - 2 finely chopped
- Onions - 2 finely chopped
- Corn flour - 2 tbs
- All purpose flour - 2 tbs
- Corriender powder - 1tsp
- Cumin powder - 1tsp
- Turmeric powder - 1/4 tsp (optional)
- Salt - to taste
- Oil - for frying
Instructions
Stage - I (Stuffing the mushrooms)
Remove stems from mushrooms. This will make them hollow.
Keep hollowed mushrooms aside and chop the stems finely.
Mash cottage cheese. Add finely chopped garlic cloves and salt to taste. Mix it well.
Stuff this cottage cheese mixture into the hollowed mushrooms.
Make a thick batter with corn flour and all purpose flour. Add salt to taste.
Dip the stuffed mushrooms in this batter and fry on medium-high heat for about a minute or two.
Drop the mushrooms one by one into the oil so that they don't stick to each other. Handle them gently while turning so that the stuffing doesn't come out.
Take them out on an absorbent kitchen paper. Keep aside.
Stage - II (preparing the gravy/base)
Heat a tablespoon of oil in a pan. Add finely chopped onions to it. Add salt to taste.
Saute till translucent. Add turmeric, ginger garlic paste and chopped green chilies. Cook for a couple of minutes.
Add cumin powder and coriander powder. Add chopped mushroom stems. Mix well.
Add about 1/4 cup of water. Cover and cook till the stems are fully cooked.
You can add a little more water if required. It should be moist enough to coat the mushrooms, not soggy.
Once this mixture is cooked, add stuffed mushrooms and give it a gentle mix. All the mushrooms should get coated.
Serve hot garnished with fried garlic cloves... :-)

I discovered a new way out!!
A delicious and healthy variation half way through the recipe
Grill these mushrooms at 400 degrees for 25 - 30 minutes. Middle of the of the oven is the best place for your tray to go in.
A mouth watering starter is ready.
Serve garnished with fresh herbs and tomatoes.
And yes, these baked mushrooms go very well with the base/gravy prepared as per stage-II in the original recipe.
Just do not mix the mushrooms and the gravy as is done in the original recipe.
Spread a thin layer of this base in a serving plate and place mushrooms over it. You can also top the mushrooms with some of the gravy/base.
